Remember when we used to play ‘jacks’ in the schoolyard or at home on the sidewalk?
Well, these small pieces of stems fall through the holes in the crusher/destemmer into the fermenting tanks. When the grapes finally fall off, the remaining stems are called jacks….

We use our feet
When we ‘punch down’ the cap on the fermenting grapes, we’ve often been asked if we use our feet. A friend fabricated this for us, so now we can say, “Yes! We use our feet”!!

Beautiful clusters of unopened flowers….. Bloom is just around the corner… keeping our fingers crossed for great weather.
So far, a fantastic harvest awaits…
Rippin’ and Tearin’
When Jesse and Jesus arrived with the big dog with the long teeth, we knew the vineyards were going to get some much needed aeration again this year. When we ‘rip’…. the soil that is 3 feet deep gets broken up, roots are able to go deeper to get needed nutrients, water is retained much more efficiently and the vines are just healthier and happier.
